Coconut Banana Bread
This is my favorite banana bread! The coconut-banana combination just puts this loaf over the top for me. Not a health conscience bread, but a very good once-in-awhile treat that makes use of those over ripe bananas.
Makes 1 loaf, about 12 servings.
Ingredients:
2 cups all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
3/4 tsp. ground cinnamon
1/2 cup unsalted butter, room temperature
3/4 cup dark brown sugar
2 large eggs, room temperature
1/3 cup sour cream
3 very ripe bananas, mashed
1 tsp. pure vanilla extract
3/4 cup sweetened coconut flakes
Directions:
- Preheat oven to 350°F (175°C) and prepare a 9x5 loaf pan
with spray oil.
- Whisk together flour, baking soda, salt, and cinnamon.
- In separate large bowl cream together butter and brown sugar with electric mixer.
- Add eggs to creamed mixture one at a time, then add sour cream, vanilla and sweetened coconut flakes.
- Add dry mixture to wet 1/3 at a time until fully incorporated.
- Pour mixture into baking pan and top with more coconut flakes, lightly pressing into dough batter.
- Bake for 60-75 minutes, until knife comes out clean in center.
