Coconut Banana Bread


This is my favorite banana bread! The coconut-banana combination just puts this loaf over the top for me. Not a health conscience bread, but a very good once-in-awhile treat that makes use of those over ripe bananas.

Makes 1 loaf, about 12 servings.

Ingredients:

2 cups all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
3/4 tsp. ground cinnamon
1/2 cup unsalted butter, room temperature
3/4 cup dark brown sugar
2 large eggs, room temperature
1/3 cup sour cream
3 very ripe bananas, mashed
1 tsp. pure vanilla extract
3/4 cup sweetened coconut flakes + some for top of bread if wanted

Directions: 
  1. Preheat oven to 350°F (175°C) and prepare a 9x5 loaf pan with spray oil.
  2. Whisk together flour, baking soda, salt, and cinnamon.
  3. In separate large bowl cream together butter and brown sugar with electric mixer.
  4. Add eggs to creamed mixture one at a time, then add sour cream, vanilla and sweetened coconut flakes.
  5. Add dry mixture to wet 1/3 at a time until fully incorporated. 
  6. Pour mixture into baking pan and top with more coconut flakes, lightly pressing into dough batter. 
  7. Bake for 60-75 minutes, until knife comes out clean in center.
