I've been making the sugary version of this for years, but here is my healthier reduced-sugar version that tastes just as good! You can present them in a little paper bag and they look just like a sack of mini potatoes! Happy Paddy's Day!🍀🍀🍀🍀 Only 2.3g net carbs each.

Makes 12 potatoes.

Ingredients:
4 oz. cream cheese, room temperature
1/4 cup butter, room temperature
2 tbsp. coconut milk powder
2 scoops (320mg) stevia powder
1 tbsp. powdered sugar
1 tsp. vanilla
2 cups coconut chips (lightly packed)
1 tbsp. cocoa powder (you can also use cinnamon or a mixture of both)

Directions:
  1. Whip together cream cheese and butter with hand mixer.
  2. Add vanilla, powdered coconut milk, stevia, and powdered sugar. Continue whipping until well combined.
  3. In food processor, process coconut chips until pieces are about an 1/8 of an inch in size (there will be about one cup after processing). 
  4. Add processed coconut chips to cream cheese mixture and mix until well combined.
  5. Place cocoa powder in small bowl and line baking sheet with parchment paper. 
  6. Lightly roll one tablespoon of mixture into cocoa powder and set on baking sheet. 
  7. Continue until you have 12 little potatoes.
  8. Refrigerate potatoes for at least an hour.
