Irish Potato Candy
I've been making the sugary version of this for years, but here is my healthier reduced-sugar version that tastes just as good! You can present them in a little paper bag and they look just like a sack of mini potatoes! Happy Paddy's Day!🍀🍀🍀🍀 Only 2.3g net carbs each.
Makes 12 potatoes.
Ingredients:
4 oz. cream cheese, room temperature
1/4 cup butter, room temperature
2 tbsp. coconut milk powder
2 scoops (320mg) stevia powder
1 tbsp. powdered sugar
1 tsp. vanilla
2 cups coconut chips
1 tbsp. cocoa powder (you can also use cinnamon or a mixture of both)
Directions:
- Whip together cream cheese and butter with hand mixer.
- Add vanilla, powdered coconut milk, stevia, and powdered sugar. Continue whipping until well combined.
- In food processor, process coconut chips until pieces are about an 1/8 of an inch in size (there will be about one cup after processing).
- Add processed coconut chips to cream cheese mixture and mix until well combined.
- Place cocoa powder in small bowl and line baking sheet with parchment paper.
- Lightly roll one tablespoon of mixture into cocoa powder and set on baking sheet.
- Continue until you have 12 little potatoes.
- Refrigerate potatoes for at least an hour.
