The Better Blueberry Muffin
A muffin that is much better for you than the average muffin. Invest in some stevia powder and pair it with regular sugar, this a makes for a low sugar treat without losing the sweetness. Using stevia by itself with produce a bitter flavor, but when paired with regular sugar this bitterness goes away completely. Contains 10.5g net carbs and only 187 calories.
Makes 8 muffins.
Ingredients:
1 c. almond flour
1/2 c. coconut flour
1 tsp. baking soda
1/4 tsp. salt
1/4 c. sugar
1 scoop stevia powder
3 eggs
2 tbsp. canola oil
1/4 c. heavy whipping cream
1 tsp. vanilla
juice from 1/2 lemon
1 cup frozen blueberries
Directions:
- Preheat oven to 350°F (175°C) and line standard muffin pan with eight baking cups.
- In medium sized bowl mix together flours, baking soda, salt, sugar, and stevia powder.
- In separate bowl mix together eggs, canola oil, whipping cream, vanilla and lemon juice.
- Pour wet ingredient mixture into dry and combine.
- Fold in blueberries.
- Fill baking cups with mixture and bake for 30-35 minutes.
