Cauliflower Mac and Cheese (Keto, Low-Carb, Gluten-Free)
Cauliflower Mac and Cheese
A delicious side dish or main course that will make any child happy. Only 3.3g net carbs per serving.
Makes 16 servings.
Ingredients:
2 medium heads of cauliflower
2 tbsp. olive oil
1 cup heavy cream
6 oz. cream cheese
4 cups cheddar cheese
2 cups mozzarella
1/2 tsp. garlic powder
salt and black pepper to taste
butter for coating 9x13 glass baking dish
Directions:
- Preheat oven to 375°F (190°C). Line baking sheet with parchment paper and prepare 9x13 inch glass baking dish by coating it in butter.
- Cut cauliflower heads into florets and toss in olive oil.
- Place on baking sheet and bake for 50 minutes or until cauliflower has browned.
- Place heavy cream in large sauce pan and heat on medium until it just begins to bubble.
- Add cheddar, mozzarella, and cream cheeses. Turn heat to low and stir until cheeses have fully melted.
- Incorporate garlic powder, salt and pepper.
- Fold cauliflower florets into cheese mixture until well coated.
- Pour contents into 9x13 glass baking dish.
- Bake at 375°F (190°C) for 15 minutes.
