Pocket Oven Cauliflower Mac and Cheese (Keto, Low-Carb, Gluten-Free)

Cauliflower Mac and Cheese

A delicious side dish or main course that will make any child happy. Only 3.3g net carbs per serving.

Makes 16 servings.

2 medium heads of cauliflower
2 tbsp. olive oil
1 cup heavy cream
6 oz. cream cheese
4 cups cheddar cheese
2 cups mozzarella
1/2 tsp. garlic powder
salt and black pepper to taste
butter for coating 9x13 glass baking dish

  1. Preheat oven to 375°F (190°C). Line baking sheet with parchment paper and prepare 9x13 inch glass baking dish by coating it in butter.
  2. Cut cauliflower heads into florets and toss in olive oil. 
  3. Place on baking sheet and bake for 50 minutes or until cauliflower has browned.
  4. Place heavy cream in large sauce pan and heat on medium until it just begins to bubble.
  5. Add cheddar, mozzarella, and cream cheeses. Turn heat to low and stir until cheeses have fully melted. 
  6. Incorporate garlic powder, salt and pepper. 
  7. Fold cauliflower florets into cheese mixture until well coated.
  8. Pour contents into 9x13 glass baking dish.
  9. Bake at 375°F (190°C) for 15 minutes.
