The Best Roasted Tomatillo Salsa


I make this every week and also use it in my tamales during the holidays. Very good and gorgeous color. Only 1.1g net carbs per serving.

Makes 12 servings.

Ingredients:
6 tomatillos
about 1/3 bunch of cilantro
1/2 onion
2 cloves garlic
1 jalapeƱo
1 tbsp fresh lime juice
a pinch of salt

Directions: 
  1. Preheat oven to 425°F (220°C) and line baking sheet with parchment paper.
  2. Cut tomatillos in half and place cut-side-down on baking sheet.
  3. Roast tomatillos in oven for 25 minutes.
  4. Place all ingredients in food processor.
  5. Processes until desired consistency. 
  6. Store in fridge up to a week.
