Roasted Radishes (Keto, Low-Carb, Gluten-Free, Vegan)
Roasted Radishes
Easy, delicious, and beautiful substitute for roasted potatoes if on the Keto diet. Otherwise a great side dish with any protein. Only 3g net carbs.
Makes 4 servings.
Ingredients:
1 pound radishes, tops trimmed and halved
1 tbsp. olive oil
1 tsp. smoked sea salt
1/2 tsp. dried dill weed
pepper to taste
4 cloves garlic, minced
Directions:
- Preheat oven to 425°F (220°C).
- Put radishes in bowl and add olive oil, toss.
- Add smoked sea salt, dill, and pepper. Toss until radishes are coated well. (Reserve garlic for later.)
- Put radishes on baking sheet with parchment paper and bake for 30 minutes, stirring occasionally to ensure an even bake.
- At 30 minutes add the minced garlic to the radishes and mix throughout.
- Bake an additional 5 minutes to crisp garlic.
