Roasted Radishes (Keto, Low-Carb, Gluten-Free, Vegan)


Roasted Radishes


Easy, delicious, and beautiful substitute for roasted potatoes if on the Keto diet. Otherwise a  great side dish with any protein. Only 3g net carbs.

Makes 4 servings.

Ingredients:
1 pound radishes, tops trimmed and halved
1 tbsp. olive oil
1 tsp. smoked sea salt
1/2 tsp. dried dill weed
pepper to taste
4 cloves garlic, minced

Directions:
  1. Preheat oven to 425°F (220°C).
  2. Put radishes in bowl and add olive oil, toss. 
  3. Add smoked sea salt, dill, and pepper. Toss until radishes are coated well. (Reserve garlic for later.)
  4. Put radishes on baking sheet with parchment paper and bake for 30 minutes, stirring occasionally to ensure an even bake. 
  5. At 30 minutes add the minced garlic to the radishes and mix throughout.
  6. Bake an additional 5 minutes to crisp garlic.
