Peanut Butter Cookies (Keto, Low-Carb, Gluten-Free)
Peanut Butter Cookies
Made with PBfit Chocolate Peanut Butter Powder
Makes about 13 cookies.
Ingredients:
Dry Ingredients
1/2 cup coconut flour
4 tbsp. PBfit Chocolate Peanut Butter Powder
1 scoop (160mg) stevia powder
1/8 tsp. salt
Wet Ingredients
3 oz. cream cheese
1/2 tsp. vanilla
2 eggs
1 tbsp melted coconut oil
Directions:
- Preheat oven to 425°F (220°C) and line baking sheet with parchment paper.
- Sift together coconut flour, PBfit Chocolate Peanut Butter Powder
, salt and stevia. Set aside.
- Beat cream cheese and vanilla until smooth.
- Beat in eggs one at a time until smooth, adding coconut oil at end.
- Pour in dry mix and continue mixing until completely combined.
- Drop 1 tablespoon of dough onto lined baking sheet, pressing with wet fork to make traditional peanut butter cookie pattern on top.
- Bake for 12 minutes.
