Keto, Low-Carb, Gluten-Free Peanut Butter Cookies Peanut Butter Cookies


Made with PBfit Chocolate Peanut Butter Powder, these cookies hold all the goodness of a regular peanut butter cookie without all the gluten and sugar. Only sweetened by stevia and the peanut butter powder itself, each cookie is only 0.7g net carbs each.

Makes about 13 cookies.

Ingredients: 
Dry Ingredients
1/2 cup coconut flour
4 tbsp. PBfit Chocolate Peanut Butter Powder
1 scoop (160mg) stevia powder
1/8 tsp. salt

Wet Ingredients
3 oz. cream cheese
1/2 tsp. vanilla
2 eggs
1 tbsp melted coconut oil

Directions:
  1. Preheat oven to 425°F (220°C) and line baking sheet with parchment paper.
  2. Sift together coconut flour, PBfit Chocolate Peanut Butter Powder, salt and stevia. Set aside.
  3. Beat cream cheese and vanilla until smooth.
  4. Beat in eggs one at a time until smooth, adding coconut oil at end.
  5. Pour in dry mix and continue mixing until completely combined. 
  6. Drop 1 tablespoon of dough onto lined baking sheet, pressing with wet fork to make traditional peanut butter cookie pattern on top.
  7. Bake for 12 minutes.
