Homemade Mayo (Keto, Low-Carb, Gluten-Free)

Homemade Mayo

Mayo is very easy to make and takes virtually no time at all! Plus it has nearly no carbs when made fresh. This recipe only has 0.1g net carbs and is very tangy. You can add less white wine vinegar and lemon juice if you want a more mild version.

Makes about 12 servings.

1 egg, room temperature
1 tbsp. white wine vinegar
1/4 tsp. dijon mustard
juice from 1/2 lemon
1 cup canola oil (or any other lightly flavored oil)
salt to taste

  1. Put egg, white wine vinegar, dijon mustard, lemon juice and salt into jar.
  2. Pour oil on top and wait for it to separate from other ingredients.
  3. Use one mixing beater from Electric Hand Mixer and rest it at bottom of jar, turn the power to highest speed and mix until mixture thickens.
  4. Once thickened (takes about a minute), move mixer a few times through mayo.
  5. Store in jar with lid for up to one week in the refrigerator.
