Countertop Pickles (Keto, Low-Carb, Gluten-Free, Vegan)

Pickles anytime! An easy ferment with easily obtainable equipment. Definitely an staple in my kitchen.

Makes 1 pint of pickles.

1 cucumber, sliced into half inch pieces
1 tbsp. sea salt
1 pint water
Optional flavorings:
1/2 tsp. dried dill (or a couple sprigs of fresh)
5 peppercorns
1 bay leaf
1 clove crushed garlic
chili pepper

1 pint mason jar with lid
Fermentation weight (can be plastic bag with some water inside if you do not have a fermentation weight.)

  1. Mix together water and sea salt to make brine.
  2. Pack cucumbers and your flavorings into jar. 
  3. Pour brine over cucumbers and spices leaving enough room for a fermentation weight.
  4. Put weight onto jar, ensuring cucumbers are fully submerged in the brine.
  5. Screw on jar lid.
  6. Burp jar by opening it twice daily. Pickles should be ready in 2-5 days depending on room temperature. Refrigerate when fermented to your preference.
