Countertop Pickles (Keto, Low-Carb, Gluten-Free, Vegan)
Countertop Pickles
Pickles anytime! An easy ferment with easily obtainable equipment. Definitely an staple in my kitchen.
Makes 1 pint of pickles.
Ingredients:
1 cucumber, sliced into half inch pieces
1 tbsp. sea salt
1 pint water
Optional flavorings:
1/2 tsp. dried dill (or a couple sprigs of fresh)
5 peppercorns
1 bay leaf
1 clove crushed garlic
chili pepper
Equipment:
1 pint mason jar with lid
Fermentation weight (can be plastic bag with some water inside if you do not have a fermentation weight.)
Directions:
- Mix together water and sea salt to make brine.
- Pack cucumbers and your flavorings into jar.
- Pour brine over cucumbers and spices leaving enough room for a fermentation weight.
- Put weight onto jar, ensuring cucumbers are fully submerged in the brine.
- Screw on jar lid.
- Burp jar by opening it twice daily. Pickles should be ready in 2-5 days depending on room temperature. Refrigerate when fermented to your preference.
