Coconut Chia Seed Pudding (Keto, Low-Carb, Gluten-Free, Vegan)
Coconut Chia Seed Pudding
This is my routine healthy breakfast. It's very filling, high fiber, and tastes delicious. Easy to make and only 3g net carbs.
Makes 1 serving.
Ingredients:
2 tbsp chia seeds
2 tbsp shredded coconut, unsweetened
1 tbsp coconut milk powder
1/2 cup unsweetened almond milk
1/2 scoop (80mg) stevia powder
Directions:
- Sift coconut milk powder into glass or jar.
- Add all ingredients and mix well.
- Refrigerate overnight or for at least 6 hours.
- Stir well before eating.
