Chicken Crusted Pepperoni and Mushroom Pizza (Keto, Low-Carb, Gluten-Free)
Chicken Crusted Pepperoni and Mushroom Pizza
A pizza crust made from ground chicken. An easy meal that satisfies the pickiest of eaters. Only 3.5 net carbs per serving.
Makes 4 servings, 2 slices each.
Ingredients:
1 lb. ground chicken
1/4 cup parmesan cheese
2/3 c. almond flour
1 egg
1/2 tsp. sea salt flakes
1/2 tsp. italian seasoning
1 clove garlic, minced
Toppings
1/4 cup tomato sauce
16 slices pepperoni
3 mushrooms, sliced
1/2 cup mozzarella cheese (or any other cheese combination)
Directions:
- Preheat oven to 400°F (200°C) and line baking pan with nonstick parchment.
- Mix together all ingredients, reserving toppings for later.
- Press chicken crust onto baking pan in desired shape. Crust should be close to 1/2 inch thick.
- Bake in oven for 20-25 minutes.
- Remove from oven and preheat broiler, moving oven tray to second lowest position in oven.
- Add toppings to pizza crust and broil for 5-7 minutes.
- Allow to cool for 3 minutes, cut, and enjoy!
