Chicken Crusted Pepperoni and Mushroom Pizza


A pizza crust made from ground chicken. An easy meal that satisfies the pickiest of eaters. Only 3.5 net carbs per serving.

Makes 4 servings, 2 slices each.

Ingredients:
1 lb. ground chicken
1/4 cup parmesan cheese
2/3 c. Almond Flour
1 egg
1/2 tsp. Sea Salt Flakes
1/2 tsp. Italian Seasoning
1 clove garlic, minced

Toppings
1/4 cup tomato sauce
16 slices pepperoni
3 mushrooms, sliced
1/2 cup mozzarella cheese (or any other cheese combination)

Directions:
  1. Preheat oven to 400°F (200°C) and line baking pan with nonstick parchment.
  2. Mix together all ingredients, reserving toppings for later.
  3. Press chicken crust onto baking pan in desired shape. Crust should be close to 1/2 inch thick.
  4. Bake in oven for 20-25 minutes.
  5. Remove from oven and preheat broiler, moving oven tray to second lowest position in oven.
  6. Add toppings to pizza crust and broil for 5-7 minutes.
  7. Allow to cool for 3 minutes, cut, and enjoy!
