Cauliflower Hummus (Keto, Low-Carb, Gluten-Free, Vegan)
Cauliflower Hummus
A basic, but delicious, cauliflower based hummus that is only 2.5g net carbs per serving. Always a good staple to have on hand.
Makes 12 servings.
Ingredients:
cauliflower florets from 1 cauliflower
1/4 cup olive oil
1/2 cup tahini
2 cloves garlic, chopped
2 tbsp lemon juice
1 tsp sea salt
1 tsp cumin
1/2 tsp smoked paprika
Directions:
- Preheat oven to 425°F (220°C) and line baking sheet with parchment paper.
- Combine garlic and lemon juice in small bowl. (This takes the bite out of the garlic.)
- Lightly oil cauliflower florets in bowl. Place cauliflower on baking sheet and roast for 30-45 minutes, stirring florets halfway through.
- Let cauliflower cool.
- Move cauliflower to food processor
. Add tahini, garlic and lemon mixture, salt, cumin, and smoked paprika.
- Pulsate a few times.
- Add olive oil and process until desired consistency.
