Cauliflower Hummus (Keto, Low-Carb, Gluten-Free, Vegan)

Cauliflower Hummus

A basic, but delicious, cauliflower based hummus that is only 2.5g net carbs per serving. Always a good staple to have on hand.

Makes 12 servings.

cauliflower florets from 1 cauliflower
1/4 cup olive oil
1/2 cup tahini
2 cloves garlic, chopped
2 tbsp lemon juice
1 tsp sea salt
1 tsp cumin
1/2 tsp smoked paprika

  1. Preheat oven to 425°F (220°C) and line baking sheet with parchment paper. 
  2. Combine garlic and lemon juice in small bowl. (This takes the bite out of the garlic.)
  3. Lightly oil cauliflower florets in bowl. Place cauliflower on baking sheet and roast for 30-45 minutes, stirring florets halfway through.
  4. Let cauliflower cool.
  5. Move cauliflower to food processor. Add tahini, garlic and lemon mixture, salt, cumin, and smoked paprika.
  6. Pulsate a few times.
  7. Add olive oil and process until desired consistency.
