Breakfast Portobello
An easy and tasty breakfast. Top with your favorite hot sauce! Only 4.2g net carbs.
Makes 1 serving.
Ingredients:
1 portobello mushroom, stem removed.
1 egg
1/8 cup Parmesan cheese
salt and pepper to taste
1 tbsp. green onion
Olive oil spray
Directions:
- Preheat oven to 375°F (190°C) and line baking sheet with parchment.
- Spray mushroom with olive oil and sprinkle with salt and pepper. Set on baking sheet top side down.
- Crack egg in middle of mushroom and sprinkle with Parmesan cheese.
- Bake for about 20-26 minutes, until egg reaches desire consistency.
- Enjoy!
