Zucchini Baba Ganoush (Keto, Low-Carb, Gluten-Free, Vegan)

Zucchini Baba Ganoush


Baba Ganoush is one of my favorites, but I never have eggplant on-hand. This zucchini based baba ganoush is just as good and so easy to make. I use my air fryer to cook the zucchini, which makes it super quick. Only 2.8g net carbs per serving.

Makes 6 servings.

Ingredients: 
2 medium zucchini
1/4 c. Tahini
1 clove garlic
1 lemon, juiced
2 tbsp. olive oil
salt and pepper to taste

Directions:
  1. Cut zucchini in quarters, length-wise, and toss in 1 tbsp. olive oil.
  2. Place zucchini quarters green side down inside either and air fryer or on grill.
  3. Cook zucchini for about 15 mins. in air fryer at 400° F (200° C) or until browned on grill.
  4. Add cooked zucchini to food processor or blender.
  5. Add tahini, garlic, lemon and 1 tbsp. olive oil.
  6. Blend until smooth and salt and pepper to taste.
