Pumpkin Pie Bites (Keto, Low-Carb, Gluten-Free)

 Pumpkin Pie Bites


A delicious pumpkin treat with only 3.3g net carbs!  Texture is similar to pumpkin pie filling and tastes just as good. Easy to make and kid approved!

Makes 10 scones.

Ingredients:

Dry Ingredients
1 cup fine almond flour
1/4 cup coconut flour
1 tbsp. coconut sugar
1 scoop (160mg) stevia powder
1/2 tsp. baking powder
1/8 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg

Wet Ingredients 
8 tbsp canned pumpkin
1/4 cup heavy cream
2 tbsp. melted coconut oil or butter
1 egg

Directions:
  1.  Preheat oven to 350° F (175° C).
  2. Mix dry ingredients well, making sure there is no large clumps of flour. You can use a sifter, a whisk, or your hands to achieve this.
  3. Mix together wet ingredients in separate bowl.
  4. Pour wet ingredients into dry and mix together. I work the dough with a rubber spatula.
  5. Divide the dough into ten pieces and shape into triangles and then flatten slightly with your hand. I usually have mine about 1 inch thick.  
  6. Bake for 9 minutes and then turn baking sheet and bake an additional 9 minutes, for a total bake time of 18 minutes.*
*For chocolate drizzle, just melt 2 tablespoons of Lily's Dark Chocolate Chips with 1/2 tablespoon coconut oil and drizzle over cooled scones with spoon.
