Mixed Berry Mini Muffins (Keto, Low-Carb, Gluten-Free)

Mixed Berry Mini Muffin


Mini muffins that only have 0.7g net carbs! Easy to make and a great substitute when craving a breakfast pastry.

Makes 12 mini muffins.

Ingredients:
Dry Ingredients
1/4 cup coconut flour
1/4 tsp baking powder
1/4 tsp salt
1 scoop (160mg) stevia powder

Wet Ingredients
3 eggs
3 tbsp. melted butter
1/4 tsp. vanilla
1/4 tsp. almond extract

1/2 cup frozen mixed berries

Directions:
  1. Preheat oven to 400° F (200° C) and oil mini muffin pan well.
  2. Sift coconut flour and add all dry ingredients, mixing well.
  3. Combine wet ingredients in separate bowl (reserving berries for later) and mix well.
  4. Pour wet ingredients into dry and mix until there are no lumps.
  5. Fold in berries.
  6. Scoop 1 tablespoon of dough into each muffin cup.
  7. Bake for 16 mins.
