Mixed Berry Mini Muffins (Keto, Low-Carb, Gluten-Free)
Mixed Berry Mini Muffin
Mini muffins that only have 0.7g net carbs! Easy to make and a great substitute when craving a breakfast pastry.
Makes 12 mini muffins.
Ingredients:
Dry Ingredients
1/4 cup coconut flour
1/4 tsp baking powder
1/4 tsp salt
1 scoop (160mg) stevia powder
Wet Ingredients
3 eggs
3 tbsp. melted butter
1/4 tsp. vanilla
1/4 tsp. almond extract
1/2 cup frozen mixed berries
Directions:
- Preheat oven to 400° F (200° C) and oil mini muffin pan well.
- Sift coconut flour and add all dry ingredients, mixing well.
- Combine wet ingredients in separate bowl (reserving berries for later) and mix well.
- Pour wet ingredients into dry and mix until there are no lumps.
- Fold in berries.
- Scoop 1 tablespoon of dough into each muffin cup.
- Bake for 16 mins.
