Friendly Chocolate Chip Cookies (Keto, Low-Carb, Gluten-Free, Vegan)
Friendly Chocolate Chips Cookies
These cookies are some of my favorites, especially when warm. The coconut oil really makes them almost melt in your mouth, which gives it a very tasty textural feel. They are eggless and contain very little sugar. A great treat on a Keto diet and a very good low-carb substitute to regular cookies, containing only 2.8g net carbs each.
Makes 9 cookies.
Ingredients:
Dry Ingredients
1 cup almond flour
1/8 tsp. baking soda
1 tbsp. coconut sugar
1/2 scoop (80mg) stevia powder
1/4 tsp salt
2 tbsp. Lily's Dark Chocolate Chips
Wet Ingredients
2 tbsp. coconut milk
2 tbsp. melted coconut oil
1 tsp. vanilla
Directions:
- Preheat oven to 325° F (160° C).
- Mix dry ingredients.
- Mix wet ingredients, then add to dry ingredients mix well.
- Drop 1 tablespoon of dough onto baking sheet for each cookie and flatten to 1/2 inch with back of wet hand or bottom of cup.
- Bake for for 6 minutes and then rotate pan in oven. Bake an additional 6 minutes, for a total baking time of 12 minutes.
- Let cool on baking sheet for 5 minutes and then transfer to wire rack.
