Cinnamon Scones (Keto and Low-Carb)

Cinnamon Scones (Keto, Low-Carb, Gluten-Free)

These are a take on my Plain Jane Scones, but with cinnamon and substituting some of the coconut sugar with stevia. This takes away almost half the carbs, leaving a net carb total of 3.4!


Dry Ingredients
1 cup fine almond flour
1/4 cup coconut flour
1 tbsp. coconut sugar
1/16 tsp. stevia powder
1/2 tsp. baking powder
1/8 tsp. salt
1/2 tsp. cinnamon

Wet Ingredients
1/4 cup unsweetened almond milk
2 tbsp. melted coconut oil or butter
1 egg

  1.  Preheat oven to 350° F (175° C).
  2. Mix dry ingredients well, making sure there is no large clumps of flour. You can use a sifter or a whisk to achieve this.
  3. Mix together wet ingredients in separate bowl.
  4. Pour wet ingredients into dry and mix together. I usually work the dough with a rubber spatula.
  5. Divide the dough into eight pieces and shape into triangles and then flatten slightly with your hand. I usually have mine about 1 inch thick.  
  6. Bake for 9 minutes and then turn baking sheet and bake an additional 9 minutes, for a total bake time of 18 minutes.
