Quick and Easy Breakfast Burrito Wraps


These are super simple and such a quick early morning meal. You can customize these to taste and please the most pickiest of eaters. I like to play around with different cheeses, meats and veggies. Real delicious with Hot Pepper Mash!

Ingredients:
1 flour tortilla (or tortilla of choice)
2 eggs, whisked
1 ounce cheddar cheese, shredded
1 tbsp. olive oil
Any herbs or spices of your choosing

Directions:
  1. Heat pan large enough for tortilla on medium and add olive oil.
  2. Add whisked eggs to pan and let cook in flat sheet at bottom of pan.
  3. While eggs are still wet on top, lay tortilla over eggs and continue cooking until tortilla is attached to eggs. (This should only take about a minute.)
  4. Flip tortilla and eggs to other side and sprinkle with cheese (add other toppings at this point also).
  5. Remove from pan once cheese has melted and let cool for one minute.
  6. Roll tortilla so egg is on inside and cut in half.
